trader joe's taco seasoning
OR your own mixture of chili powder, cumin, paprika, onion powder, garlic powder and cayenne.
your favorite salsa
avocado, sliced
grape tomatoes, sliced
iceberg lettuce--i'm always a fan of darker greens, but i feel like iceberg is the quintessential taco lettuce.
any other vegetables you like: black olives, pickled jalepenos, etc.
and a few non-paleo items for you know who:
sour cream (i dabbled)
corn tortillas
shredded cheese
brown the beef in a pan with a bit of olive oil, add your seasonings and a few tablespoons of salsa. this helps keep it moist. prep your toppings and cook the meant until it is no longer pink.

friday morning i whipped up breakfast and leftovers for packed lunches. george got a taco salad with crushed up corn tortillas.
i made myself a chicken salad with leftovers from wednesday's supper.
i diced up a leftover chicken breast (with bacon), mixed in a finely diced stalk of celery, a couple teaspoons of capers, salt, pepper, and a tablespoon or so of all natural mayonaise. obviously there is a little soybean oil here, which i normally avoid, but i didn't really have time to make a homemade mayo. i'll just take an extra swig of fish oil tonight.

george had to leave before breakfast, but for myself i sauteed 1 shallot and 3-4 baby portobella mushrooms in my most favorite butter.
then i scrambled in 4 eggs (yes, i eat 4 or more eggs in one sitting), seasoned well with salt and pepper.
