1 pound of GF ground beef
1 medium red bell pepper, chopped
2 cloves of garlic, minced
1 medium yellow onion, chopped
2-3 tablespoons of almond flour (more if you aren't worried about calories)
2 eggs
salt & pepper
olive oil
saute the bell pepper and onion in a preheated pot coated in olive oil. let these cook for about 7-9 minutes over medium heat until translucent and soft. now, add the minced garlic. only let this cook for about a minute.
while the meat is cooking down, hollow out your tomatoes. slice about a half inch off the top of the tomato exposing the flesh and seeds. using a small paring knife and/or a melon baller scoop out the insides. i couldn't let myself throw out the flesh and seeds out. they are currently sitting in a tupperware in the fridge waiting to be made into a salsa or red sauce... we'll see about that.
once your tomatoes are hollowed out, drizzle some olive oil over them, then season with salt and pepper.
once the meat is cooked thoroughly, remove it from the heat. once it has cooled a couple of minutes, you need to temper the eggs. beat the eggs in a small bowl. take a small amount (2 or 3 tablespoons) of the meat mixture, add it to your beaten eggs and mix well. once it is encorporated, add another tablespoon or two. once the eggs have come up to temperature add the entire bowl to to the meat mixture. now you can add the almond flour. mix well and divide among the 4 tomatoes.
bake this covered for 30 minutes removing the foil halfway through.
