big dave's mango salsa


i suppose it would be delicious on marlin too :)

this is my dad's recipe that i have been making a lot lately. it is amazing on a salad and even more amazing over grilled fish; black sea bass being my favorite.




3 large mangos
handful of cilantro, rinsed well and finely chopped
half a jalepeno, minced
1 cup of grape tomatoes, finely chopped
2 green onions, finely chopped
1/4 red onion, minced
juice of 2 limes
salt & pepper










mangoes have a very large flat seed in the middle. as opposed to confusing the hell out of everyone trying to explain how to do it, i found a video that explains it much more clearly and concisely than i ever could...









once your mangoes are all chopped up to relatively the same size, add the rest of your ingredients to the bowl and mix well. taste it to check for seasonings and then refrigerate. i find the longer it sits, the better it gets.
