meals in between

 here is a massive taco salad with an ungodly amount of avocado on top. doesn't even need dressing since the beef is well seasoned and salsa was added during the cooking process.


fluffy scrambled eggs with a few slashes of hot sauce.


this recipe needs a little tweaking before posting, asian marinating chicken drumsticks. they turned out OK but have the potential to be a lot better.... stay tuned!





 i found the trick to adding fresh spinach to eggs without them sitting in a pool of liquid, which the spinach normally gives off. add the spinach when your eggs are 95% done. fold the spinach in and serve immediately

look!! eggs are done and no water!!




 add some bacon and it's seriously my new favorite breakfast.





sticking with the spinach theme, i blended 2 big handfuls of it to a coconut milk and whey shake recently and it was a delightful color of green, and you can't even taste it.








NEW TOY ALERT: kuhn rikon julienne peeler! it's so much fun.



here i used it on some zucchini that i sauteed in butter, garlic and lemon juice then topped it with pan seared sea scallops. so delicious and a quick supper!
