paleo mexican slaw

i was craving a bright and summery salad and this totally hit the spot. this would be amazing topped with grilled chicken, steak tips, fish or even seasoned taco beef. it is super versatile and just gets more delicious the longer it hangs out in the fridge.

juice of 1 lime
4 tablespoons of white vinegar
1 clove of garlic
1 tsp. cumin
1 tsp. chili powder
1 tablespoon honey
salt & pepper
1/4 cup of good olive oil
handful of cilantro, rinsed well and minced
2 green onions, chopped
1 bag of pre-shredded slaw (you could absolutely grate your own cabbage)



in a good sized bowl, mix together the first 7 ingredients. do a quick taste check to make sure everything is perfect, then slowly drizzle in the olive oil as you whisk vigorously. next, you can mix in the cilantro and chopped green onions.





finally add the cabbage mixture and mix well.


i have a feeling this will be a new staple once the warmer weather hits and the grill is fired up!

It's great from the start (nice and crunchy) but only gets better as it sits and the flavors marry. I like it both ways!

Thank you for this recipe, it was DELISH!!! A few modifications on a whim: substituted blue agave syrup (instead of honey) and added diced red bell pepper, fresh corn and jalepeno. SO good :-)
