"if you don't like this, something is wrong with you..."

almond crusted chicken breast w/ homemade pesto
chicken breast
1 cup almond meal
Trader Joe's 21 seasoning salute
sea salt
pepper

put the almond meal into a large freezer bag or a glass dish. season with salt, pepper and 21 seasoning salute. coat the chicken breasts in the almond meal mixture. really press the almonds into the chicken to get it to stick. place it directly in a saute pan heated with olive oil. cook until no longer pink in the middle over medium heat.


these toast very fast... don't take your eye off them!

about 2-3 cups of fresh basil leaves
handful of toasted pine nuts
sea salt and pepper
3-4 cloves of garlic smashed
olive oil
**if you tolerate dairy, add some freshly grated parmigiano reggiano which is standard in a classic pesto.

throw all those ingredients into a food processor. once everything gets going, start drizzling in extra virgin olive oil until you get the desired consistency. it will end up to be about 1/3 cup of olive oil. let the processor run for a few minutes to incorporate everything.








i served this with a broccoli and grape tomato saute. i had a ton of leftover steamed broccoli so i threw that into a pan with a little bit of butter, 1 clove of sliced garlic, and a handful of cherry tomatoes. this doesn't take long to cook, since the broccoli was already steamed.

the final product was a hit
