paleo apple crisp!

my friend Kelly (& co.) and i went apple picking on sunday leaving me with an overabundance of cortlands, honeycrisps and a gala or two! is there any better time of year for apple crisp?? kelly helped with the crisp too :)

6-8 medium apples (the apples we got were on the smaller side and we used about a dozen)
1 1/4 cup almond flour
4 tablespoons of butter (as you know by now, i use KerryGold)
1/2 cup of pecan halves
juice of 1 lemon
1/2 teaspoon of freshly grated nutmeg
2 teaspoons of cinnamon
1/4 cup of raw local honey (i'm lucky and get to use my dad's honey for this)






preheat the oven to 350 degrees.

peel, core and slice the apples. toss them in the lemon juice, cinnamon, nutmeg, and honey. pour the apple mixture in a 9 x 9 glass pan.



in a separate microwave safe bowl melt the butter. mix in the almond flour and pecans. use a fork to make crumbles and sort of flake this on top of the apples.




cover in foil and bake for an hour removing the foil halfway through.










yes, that is vanilla ice cream.
and yes, it was worth it.

This looks great! While not full on Paleo, my Mom is getting into some more Paleo foods and for her birthday she wants me to make an apple crisp. I found your recipe and it looks perfect - thanks!

Thank you for posting this! I just made some and it was super delicious! I had to share it on my facebook. I made a couple small adjustments to make it dairy-free. I used ghee instead of butter and Organic Rice Dream (vanilla flavor) instead of ice cream. Perfect!

Its been 12 days on low-carb PALEO for me and I've shed 7 pounds. Amazing! I went hunting for a dessert that would keep me honest and found this one. Now the trick will be to limit my portion. It tastes wonderful! I added some shredded coconut to the crumble. THANK YOU!

I'll be making this today, looks wonderful. One request though -- it sure would be nice if you had a printer friendly option for your recipes. The way you have this posted it's impossible to print as a regular recipe because of the directions being sprinkled throughout the photos. Looking forward to making this!

Get a grip! it doesn't take a genius to sub the "butter" with coconut oil and leave out the ice cream. Ugh!

If I wanted to make a bunch of these and freeze, would I pull it out at the 30 mins and then freeze? Then when I want to use it, take out and pop in for 45-60 mins?

This was delicious! I added some shredded coconut to the toping and it was great. Also had to sub in walnuts for the pecans but still came beautifully. Great recipe!
